100% Organic, Vegan, Gluten-free Brownie Mix 

Yields approximately 12 brownies (depends on your pan size)

 

What you need: (we recommend organic ingredients. Use what you have available.) 

  • 2/3 cup (135 g) filtered water
  • 15 oz (426 g) canned, organic, unsalted black beans (drained and rinsed)
  • 1/2 cup (95 g) organic olive oil
  • 1/2 tsp (1 g) vanilla extract
  • Parchment paper

 

 

Procedure

 

  • Preheat oven to 350 F degrees.
  • In a small bowl, make flax "egg" by mixing water and ground flax (included in a small container within mix).
  • In a food processor, puree black beans with olive oil and vanilla extract.
  • Beat for 2 minutes on high (to aerate batter).
  • Line 8"x8" baking pan with parchment paper and lightly grease with olive oil. Spread batter to about 3” thick.
  • Bake for 40-50 mins or until brownie appears to have a crackly, top layer. Edges will be slightly pulled away from the sides (If using a larger pan where the batter is a thinner layer, bake for less time. If using a glass pan, bake for longer.)
  • Allow cooling to room temperature before removing from pan and cutting. The middle will seem under-baked, but will firm up when cool. You're looking for a fudge-like, brownie consistency.
  • Store in the freezer or refrigerator as you see fit. We don't think these will last long enough to be stored!
